Aviation is one of the few industries built around continuous operation because cargo moves through the night, aircraft are turned and maintained in the early hours, security operations open before dawn and ground handling flexes around a flying programme that doesn’t work around conventional working hours. Yet in many airports and aviation facilities, staff food provision is still planned around a standard working day.
Canteens typically close in the early evening and retail outlets shut even earlier. What remains available overnight is often a fraction of what daytime employees have access to. This is a notable gap in an industry that has spent decades designing operations around 24/7 demand. It raises the question of whether the infrastructure that supports the workforce is available around the clock and often it is not.
The night shift is not one predictable group
One of the reasons why there is such a gap between the day and night shifts is because the out-of-hours demand is difficult to plan for. "The night shift" implies a single, stable population, whereas aviation is built around many departments working to different patterns that are shaped by the flying programme rather than by the other departments. Add seasonality, day-of-week variation and the ever-changing flight schedules then any provision planned around averaged assumptions will be misaligned on most nights.
Disruption changes food demand very quickly
Disruption is a routine occurrence in aviation rather than an exception to it. A weather event, an IT failure or a sequence of rolling delays can turn a normal shift into an extended one within hours, so employees scheduled to finish at 10pm remain on site past midnight. More staff are retained than the roster anticipated, break patterns shift, and catering provision planned against the original shift pattern no longer reflects what the operation needs.
This pattern is reflected by Connect Vending's anonymised sales data from one 24-hour aviation site, which showed that the peak demand window occurred between 10pm and 1am. This three-hour window captured over 55% of recorded night-shift activity, showing a clear concentration of demand during hours when conventional food provision is often unavailable.
Aviation Business News has previously reported on the pressure that disruption places on aviation employees, particularly customer-facing teams managing frustrated passengers through long, unplanned hours. These are the periods in which an operation most needs its workforce supported on site, and the periods in which a daytime-hours catering model offers the least.
What happens when food is not available
When food is not available on site, employees often leave the site to find it. However, because of airport security and access controls, that takes longer than it would in a conventional workplace, and security is not the only delay. The nearest open option may be a terminal away, so break periods last longer than expected and queues build at the few facilities open at that time. This all adds up to lost productive working hours. Persistent gaps can also create a visible difference between the facilities available to day and night-shift employees.
Demand data, not fixed assumptions
Making fixed assumptions, such as treating night-time provision as a scaled-down version of the daytime offer, does not always reflect a site's actual demand. Instead, provision should be planned around observed behaviour, using hourly sales data to identify the most appropriate range and replenishment schedule for each site. Operators can examine sales by hour and by day, product preferences by shift, repeated stock-outs, waste figures and seasonal variation. By analysing this data, patterns quickly emerge. For example, the three-hour peak identified in this dataset could easily be missed if provision were planned around daytime purchasing patterns.
Although the night shift shouldn’t be considered as a scaled down version of the day shift it is worth remembering that the night shift is a separate challenge that often requires different products, such as more ready-to-heat meals to cater for the different peaks throughout the night. For operators, adapting range and replenishment around observed purchasing patterns creates an opportunity to improve availability without simply increasing stock levels.
Plan for disruption, not just the normal roster
Discussions around food and beverage provisions should be included in general operational and maintenance discussions rather than being considered as a separate factor. Aviation businesses already stress-test their staffing models, systems, and contingency plans against disruption so the same discipline should be applied to the infrastructure that sustains the workforce during it. The question for any operator is a simple one: if a disruption keeps a further 100 people on site for three additional hours tonight, can the existing facilities support them?
Where the answer is no, that is not a hospitality shortcoming. It is a gap in the resilience of a 24-hour operation. Aviation has spent years designing its operations around round-the-clock demand. Staff food provision should no longer be designed around nine-to-five assumptions.
